Sangiovese (”the blood of Jupiter”) is a classic grape variety, quite at home among the Shiraz and Cabernet vineyards of Australia. The vines, planted on a hilltop block with particularly shallow red loam over limestone, have flourished producing a lighter style with softer tannins and subtle spicy flavours. This plus the natural acidity makes Sangiovese ideal as a sparkling wine.

 Although not a typical sparkling variety, the restrained fruit and hint of earthiness means this wine can be enjoyed with a wide variety of foods and festive occasions.
